The flour used in this recipe

The flour used in this recipe can be varied in both content and grind. I have been using General purpose white unbleached, but I have used best for bread and 100% whole wheat that I ground myself. I still use two or three cups of whole wheat ground with the millet (one cup of millet) in most batches. I did buy a 25 lb. bag of 100% whole wheat when it was on sale, but most of the time it is overpriced and I will not use it. Using this recipe and making your own bread will make the cost per loaf reasonable enough that you may decide to use the whole wheat and still save money and have the best bread that can be had at any price.
