Honey or sugar you choose

When it comes to sweetening your dough you can do about as you please. I prefer to use honey that comes from local beekeepers, but the cost is usually quite high which becomes prohibitive. I buy some that is harvested the closest to my home that I can afford. The benefit to locally harvested is it contains the pollens from the plants you may want to develop an immunity to and local is purported to have that ability. I try to get uncooked as well since raw is more beneficial and I do eat it on toast or sandwiches. Once it is in your dough you will not eat much of it before it is cooked. Brown sugar is for the most part just white sugar with molasses in it but it does the job as well and you may like the flavor it imparts. I use about the same amount of either and the amount is arbitrary you can adjust it to your liking.
