secret yeast bread recipe

BASE RECIPE

Water 6 cups

sugar 1/2 cup

yeast 2 tablespoons

salt 2 tablespoons

potato 1 cup mashed secret ingredient

oil 1/2 cup

flour 12 cups more or less to make dough

To make this secret recipe heat water to 110 degrees Fahrenheit, add sugar, salt, potato, oil and stir until smooth and 105 degrees Fahrenheit, add yeast and let soak for about 5 minutes. Put flour on top of mixture one cup at a time until the yeast mixture is completely covered. Mix and add flour as necessary to make a dough that is similar to pancake batter. Let it sit now until the yeast grows, about a half hour. Now add flour to make a dough that does not stick to the side of the mixing bowl. I do all of this in a Bosch mixer but it can be done by hand it's just a lot of work. In the Bosch I mix it a total of 6 to 8 minutes. It usually takes that long for the gluten to come up, whatever that means. If you are mixing it by hand it takes a lot longer and you will have to beat it with your fist some to get it to the point it can be made into loaves. At this point it needs to sit and rest for about 30 minutes. Now make it into 5 to 7 loaves, put them on the stones and let them raise to about double. If you are using pans fill the pans half full and then let it raise just to the top of the pan. While the dough is raising pre-heat your oven to 400 degrees Fahrenheit. When the loaves are ready put them in the oven and bake them for 30 minutes. I only bake half of the loaves at a time so they are not on different levels or crowded. When they are baked I take them off the stones or out of the pans and set them on cooling racks and butter the tops of the loaves, now let them sit until they are completely cool. My wife likes hot bread so she will cut one loaf and butter the slice and eat it. When they are completely cool we put them in plastic bags to keep them fresh.
