Best Beef Stroganoff

Ingredients

  

  • 1½ lbs beef sirloin (you can use whatever cut you’re comfortable with)
  • 1 tablespoon flour seasoned with salt, pepper, garlic powder, onion powder and any other seasonings you like
  • 2 tablespoons butter + 2 tablespoons butter
  • ½ medium yellow onion, chopped
  • 8 oz sliced mushrooms (be sure to wash the mushrooms before slicing if using whole ones)
  • 1 (10½ oz) can cream of mushroom soup
  • ½ cup half and half or milk
  • ½ cup sour cream
  • Cooked wide egg noodles (I also like bow tie pasta even though it’s not traditional)

 

Instructions

 

  • Cut sirloin into ¾ inch pieces (bite sized). Stir the flour and seasonings together in a medium sized bowl. Add the beef and stir to coat.
  • Melt 2 tablespoons of the butter in a large skillet over medium heat. Add the beef and let cook, without stirring, until browned on the bottom (about 2–3 minutes).
  • Flip and cook on the other side. Remove the beef from the skillet and set aside.
  • Add 2 more tablespoons of butter to the pan, then add the chopped onion and mushrooms to the pan (no need to wipe the skillet first). Cook for 4–5 minutes, or until the onions are soft and the mushrooms are nearly cooked through.  Remove from the pan and place with the beef.
  • Add 2 more tablespoons of butter to the pan and stir in 2 tablespoons of flour, your choice of seasonings (at minimum salt, pepper, garlic, and onion powder to taste)
  • Add the beef back to the pan, along with the cream of mushroom soup and half and half or milk.  Stir to combine.
  • Lower the heat and simmer until the meat is cooked through yet still tender, about 5–6 minutes.  Pay attention during this to keep from scorching – stir gently often. Take off the heat.
  • Stir in the sour cream (doing this last prevents it from curdling).
  • Serve with egg noodles, rice, or mashed potatoes.

*Sirloin steak – 1.5 lbs

*Yellow Onion – 1 small

*Mushrooms – 8 oz (I like baby bellas for this, but you could also use white.  If you get presliced you don’t have to wash them, but they are ultimately more tough.  I prefer slicing my own)

*Cream of Mushroom Soup – 1 can

*Half and Half or Milk – only need ½ cup so a small container is plenty

*Sour Cream – again only need ½ cup so just a small container is plenty

Wide Egg Noodles or whatever you want to serve it over.
